Origin: This lot comes from Finca La Mina de José, farmed by William Díaz in La Hondurita, La Palma, Chalatenango, El Salvador, grown at around 1600 masl. It is a standout expression of the Pacamara varietal — large beans, intense sweetness and a syrupy mouthfeel. The cherries are processed with the semi-washed (honey) method and slowly dried on African raised beds. Processing is handled by CaféNor, a carbon-neutral mill founded by Alejandro Valiente, which helps lock in the cup's clarity and rich sweetness.
