Taste profile: yellow plum, peach, honey, slightly winy, very sweet, silky, clean

Origin: This Jaguar Honey lot comes from Tarrazú, Costa Rica's most celebrated coffee region — often called the country's "coffee nursery" — grown at around 1400–1600 masl and processed at Beneficio San Diego, one of the country's most respected mills, working with smallholder farmers. It is graded SHB (Strictly Hard Bean), Costa Rica's top altitude grade: coffee grown at 1200 masl or higher, where cherries ripen more slowly and develop denser, more flavourful beans. Processed with the yellow honey method, the cherries are pulped with part of the mucilage (the "honey") left on the bean, then slowly dried so the sugars develop a deep, syrupy sweetness — giving a clean, silky cup with notes of yellow plum and peach, a gentle winy character and a very sweet honeyed finish.

The name carries a purpose: a portion of every sale supports jaguar conservation in Costa Rica — an endangered species threatened by deforestation and habitat loss — so each cup helps protect the animal it's named for.
