This coffee is produced by Mauricio Salaverria at Villa Galicia farm in Ataco, Apaneca Ilamatepec region of El Salvador. Mauricio is known as a "process maestro" who has developed a unique "nature Pineapple" processing method to enhance the coffee's tropical profile. Unlike traditional natural coffees that dry for 10-15 days, this coffee dries in the shade on raised beds for almost 30 days. The producer ensures regular stirring for even drying, allowing time to develop the exceptional flavor profile. With a cupping score of 85 and terroir-level traceability, this coffee showcases the innovation and quality possible in Salvadoran specialty coffee.

To achieve this process, the coffees are left to dry for a long time in the shade. Mauricio developed this 'recipe' to enhance a coffee's tropical profile. This coffee dries in the shade, on raised beds, for almost 30 days, whereas a traditional natural coffee will dry for 10 to 15 days. The producer ensures that the coffee is stirred regularly to ensure even drying, and time does the rest!
